For inspiration, I use https://mizage.com/shush/ that provides this globally on Mac. I like the feedback sounds and how you can use the same keyboard shortcut to either push-to-talk or toggle (by double-tapping it to toggle)… though perhaps overloading functionality in that way makes it a bit too much of a power-user UI.
