Pop window is blank in VM

Using Parallels 18 w/ a macOS Monterey VM on an M1 Pro MBP, the Pop windows are all blank making them impossible to interact with.
Visual Studio Code has a similar issue (and is also an Electron app) - launch VScode via
code --disable-gpu
from the command line makes it work, but a similar flag doesn't have any effect on launching Pop via /Applications/Pop.app/Contents/MacOS/Pop

I was hoping to set up an isolated environment for pair programming by using Pop in a Virtual Machine on an M1 mac. Doing so results in the blank Pop window bug. I cannot seem to change the outcome even when messing with the Info.plist values.
Is there a simple way to set the log level to debug to get more helpful output?
